When I want something light but satisfying for supper I'll make zucchini noodles or "zoodles"! They're fun to eat and you can have them raw with a sauce or cook them...they are great either way. 

Here I'm having them raw with a creamy, garlic-y, avocado sauce that adds some richness and allot of flavor.

To make the noodles a Spirilizer is really handy to have but if you don't have one you can still make this dish. Before I got mine I used to just use a vegetable peeler and take long strips off of the zucchini which gave me long flat linguine style noodles instead of spaghetti style.

ZUCCHINI is a great little veggie. It's a good source of manganese and vitamin C. It also contains vitamin A, magnesium, folate, potassium, copper and phosphorus. Super nutritious!

AVOCADO is an amazing fruit. It's packed full of nutrients that are beneficial for skin and overall health. It's a great source of healthy fat, vitamin K, folate, vitamin C, potassium, vitamin B5, vitamin B6 and vitamin E.


You will need:

1 ripe avocado
1 tbsp. extra virgin olive oil
1-2 cloves of garlic
1/4 cup fresh basil leaves
Juice of 1/2 lemon (more or less to taste)
1/4 -1/2 tsp. salt (more or less to taste)
Freshly ground pepper

1. Blend everything in a blender or food processor until smooth and creamy.
2. Add water to adjust the consistency if needed.
3. Spoon over or toss with zucchini noodles and enjoy!
